The signature culinary outlet of Ayana Resort & Spa Bali, DAVA Steak & Seafood is rated as one of the finest upmarket dining destinations on the island. After a successful re-opening in 2016, staunch clientele and new patrons alike enjoyed sumptuous culinary delights under the direction of Executive Chef Patrick Callarec in an elegant setting.

Returning to its distinctively serene lotus-shaped venue, DAVA has guests and foodies fawning all over again. The main dining area features an expanse of posh cream marble flooring, lovely hand-finished plush dining furnishings and bright lofted ceiling. Whorls of meticulously floral carved wooden partitions and ceiling frescoes contrast beautifully against the stark minimalist interior, while wooden ceiling fans hang above the dining area.

For steak, premium cuts from three distinct regions are available – US, Australia and Japan. The standout from the seafood menu is undoubtedly the Canadian lobster. Guests can opt for a classic grill finish or thermidor style, both deemed the ideal cooking methods to enjoy the natural flavours of the exquisite produce.

A particular favourite is the robust and hearty charcoal-grilled beef tenderloin. Using only the highest quality beef, the choice cut is grilled to absolute perfection over a hot charcoal flame in DAVA’s dynamic display kitchen. Served with slow roasted garlic and succulent wine tomatoes, the dish is undoubtedly the pinnacle of the restaurant’s new menu. Savour each bite of the tender beef with a specially prepared mushroom sauce and a fine selection of custom gourmet salts.

Some of the recent and popular addition to DAVA Steak & Grill include the Salmon Beetroot Gravlax with horseradish ice cream and Smoked Apple Wood wagyu tartare with porcini bernaise.

The Salmon Beetroot Gravlax is a highly unorthodox dish which combines multiple disparate elements – fresh salmon, beetroot, and ice cream. The combination is executed brilliantly to achieve harmonious perfection.

The smoked beef tartare with porchini bernaise delivers more than what you would expect from a normal main course. Served enclosed to trap the smoky aroma, a spectacle is offered as the dish is presented on the table, with the opening of the closure allowing fragrant apple wood aroma to escape, revealing the beautifully plated wagyu.
