For our simple recipes, we like to keep them robust yet delicious. We limit ourselves to simply eight ingredients for you to hunt down, barring from everyday essentials such as oil, salt, pepper, sugar and water.

INTRO

Ga nuong sa is Vietnamese lemongrass chicken, an aromatic and versatile dish served over rice noodles, vermicelli, broken rice or salad greens. The marinade is versatile, suitable for any kind of proteins from beef, pork to fish. Try it today, it’s finger-licking good!

RECIPE

Ingredients (serves 4)

400g chicken thigh (pounded to 2.5cm thickness)

1 tablespoon garlic (chopped)

1 tablespoon shallots (chopped)

1 stalk lemongrass (trimmed and chopped)

1.5 teaspoon dark soy sauce

1.5 tablespoon fish sauce

The Method

1) Put garlic, shallots, lemongrass, 1.5 tablespoons sugar and 0.25 teaspoon black pepper into a food processor and blend till fine.

2) Add the soy sauce, fish sauce and 1 tablespoon oil to food processor and blend till smooth chocolate brown.

3) Add sauce to the chicken in a bowl, and turn to coat well. Cover and set aside at room temperature to marinate for 1-2 hours.

4) Preheat a grill or pan, cook for 6 to 8 minutes, turning frequently, until done. Serve over rice vermicelli (or plain rice) with fried egg and salad leaves.
